Last weekend was my best friend's 20th birthday and I (Nancy) decided it was a great idea to bake her some good old cupcakes, of course! Since we were planning on drinking champagne that night, I thought it would be very appropriate to make her the strawberry champagne cupcakes. (Pictures will be posted soon) I was so excited to bake them all week, and in the end they turned out pretty amazing!!! I love the recipe and will surely be making some more soon! The best part out of all of this was that finally a lot of my friends and coworkers had a chance to try them too, and to my surprise they loved it.
On the side note, the birthday was a success and we all had a great time! The next day I had to go to work and right before my lunch break I saw that there was a cupcake truck outside the window. Nope, it definitely was not Flirty's cupcakes (if that's what you guys are thinking). It was a green truck that had black bold writing that read, "CUPCAKES FOR COURAGE". I was pretty pumped and ready to try the new cupcake truck! Once I was on break, I went over and saw that they had about 5 flavors to choose from: Pink Velvet, Black and White, Vanilla, Strawberry and Dreamsicle. While waiting in line, I was contemplating on which flavor to choose from either Pink Velvet or Strawberry? Since I already had made strawberry flavored the night before, I decided to try the pink velvet. As it was my turn to order, there were two ladies in the truck. I asked them about their business and if they were newbies. They replied saying they were from a suburb called Elmhurst, which is actually near from where I am originally from. They said that they are new to this business and it was their second day in the city, so it was pretty exciting! I got a chance to tell them that my best friend and I blog about cupcake bakeries in Chicago, and they jotted down our site (so hopefully they checked us out!).
Anyway, after my lunch, I finally tried the cupcake and I must say it was very moist and spongey. It was definitely good and tasty and I for sure want to try more of their flavors again soon! I looked them up recently to find out more on their business and they are just like Flirty's that go around Chicago at certain times, different for each week (you can look up their schedule at their website: http://www.cupcakesforcourage.com/schedule.html).
So wondering why they are called, "Cupcake for Courage"? Well Cupcakes for Courage is the brain child of Kathryn and Laura Pekarik, two sisters that share the same passion for baking and want to share that passion with the world one cupcake at a time. Kathryn was dianosed with non-hodgkins t-cell lymphoma in May of 2010, and later that year had held a benefit to help raise money for her costs of medical care. Laura held a bake sale and baked 250 cupcakes at the event. After that they decided it was a great idea to bake cupcakes while also raising money for cancer. Oh and also exciting! Someone ordered cupcakes from us! So Melanie and I will be busy baking all summer long! If you guys would like to order something, please let us know the flavor, amount, and time needed it by. We would love to bake for you.. Afterall, that is what we do best! :)

Don't forget a head us on the Jelly Belly contest! One of Nancy's friends informed us about it (it's a cupcake decorating contest) and we will be making our cupcakes this week! Voting for winners will be soon, so keep an eye out for that!
